Hi, I hope you are having a good day. Today I am sharing a short post for an easy Carrot Watermelon Summer Salad.
This Carrot Watermelon Summer Salad is so easy and perfect for the summer. It is really easy and lovely and refreshing.
The recipe is adapted from a book called: A modern way to cook and the name of the recipe is called Too Hot Salad which I think is a wonderful name for this salad.
You can mix, add adapt this salad to your taste, you don’t have to use different seeds or use mixed sprouts if you don’t want to, your could use some nuts instead.

Carrot Watermelon Summer Salad
- 250 g watermelon
- 2 large carrots
- 1 medium cucumber
- 30 g mixed sprouts (optional)
- 15 g sunflower seeds
- 15 g pumpkin seeds
- 2 handfuls of lettuce leaves
- 1/2 lime
- 1/2 tablespoon honey
- Skin and roughly cut up the watermelon and place on/in a plate/bowl. Using a peeler peel the carrots and place with the watermelon, half the the cucumber (peel it if you do not like the skin) and cut into slices.
- Mix the watermelon,carrots, cucumber, seeds and lettuce leaves together. In a small bowl mis the lime and honey together and pour over the salad and give a good mix, sprinkle over the sprouts if using and serve.
